A Cut Above: Chef Jonathan’s Perfect Prime Rib

Sunrise anchor Samantha Byrd spoke with Chef Jonathan Palacio in the 21st episode of News 11's cooking segment exclusive to Sunrise at 6:00am.

YUMA, Ariz. (KYMA, KECY) - As we approach Christmas, Chef Jonathan has a perfect recipe to share with your family and loved ones.

Ingredients

  • 9lbs Standard Rib Roast
  • 4 sprigs of Fresh Rosemary
  • 4 sprigs of Fresh Thyme
  • 5 oz Sprouts Organic Olive oil
  • 3 oz Celtic Salt
  • 3 oz Course Black Pepper
  • 4 Garlic Cloves

Instructions

Step 1. Place your standing rib roast in the refrigerator uncovered for a duration of 12 hours to 24 hours. Remember when cooking your prime rib, you want to let your roast get room temperature.

Step 2. preheat your oven to 450° . Take your fresh rosemary and thyme, Do a nice rough chop of all your herbs. Coat your rib roast with olive oil and generously salt and pepper the outside along with your herb mixture sure to coat everywhere. Take your garlic cloves and cut into three pieces and do little cuts in your rib roast and push the garlic cloves in the roast.

Step 3. When your oven has reached the temperature of 450° then place your rib roast on a elevated rack with a baking sheet under into the oven. Let Cook for a duration of 15 minutes and then reduce the heat to 290° for 15 minutes per pound.(the purpose of adding it for the first 15 minutes is to sear the outside.

Step 4. Pull your rib roast out of the oven and let rest for 20 minutes before serving and enjoy a beautiful mid rare Prime Rib with your loved ones.
