Chef Jonathan’s Sweet Potato Waffles with Hot Honey

YUMA, Ariz. (KYMA, KECY) - Sometimes you just want breakfast for dinner and this is the perfect recipe to do so. 

Ingredients:

For the Waffles:

 1 cup mashed sweet potatoes (about 1 medium sweet potato)

• 1 cup all-purpose flour

• 1 teaspoon baking powder

• 1/2 teaspoon baking soda

• 1/2 teaspoon salt

• 1 teaspoon cinnamon

• 1/4 teaspoon nutmeg (optional)

• 2 large eggs

• 1/2 cup milk (or milk alternative)

• 1/4 cup melted butter or vegetable oil

• 2 tablespoons maple syrup or honey

• 1 teaspoon vanilla extract

For the Hot Honey:

• 1/2 cup honey

• 1-2 teaspoons red pepper flakes (adjust to taste)

• Optional: a pinch of salt

Instructions:

1. Prepare the Sweet Potatoes:

   Peel and dice the sweet potato. Boil or steam until fork-tender, then mash until smooth. Allow it to cool slightly.

2. Make the Hot Honey:

   In a small saucepan, combine honey and red pepper flakes. Heat over low heat for about 5-10 minutes, stirring occasionally. Remove from heat and let it sit to infuse the flavors. Add a pinch of salt if desired.

3. Mix the Waffle Batter:

   In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

   In another bowl, combine the mashed sweet potatoes, eggs, milk, melted butter, maple syrup, and vanilla extract. Mix until smooth.

   Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are fine.

4. Cook the Waffles:

   Preheat your waffle maker according to the manufacturer's instructions.

   Grease the waffle maker if necessary. Pour an appropriate amount of batter into the waffle maker and cook until golden brown and crispy (usually about 4-5 minutes, but this may vary).

   Repeat with the remaining batter.

5. Serve:

   Serve the waffles warm, drizzled with hot honey. You can also add toppings like whipped cream, nuts, or fresh fruit if desired.
