YUMA, Ariz.-(KWST)
This is a perfect dish to make ahead of time for that barbecue or family dinner!
Ingredients
For the Orzo Pasta à la Vodka:
• 1 cup orzo pasta
• 2 tablespoons olive oil
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 1 can (14 oz) crushed tomatoes
• 1/2 cup heavy cream
• 1/4 cup vodka
• 1 teaspoon red pepper flakes (adjust according to your spice preference)
• Salt and pepper to taste
• Fresh basil, chopped (for garnish)
• Parmesan cheese, grated (optional)
For the Burrata Cheese Topping:
• 1 Burrata cheese ball
• Micro basil greens (for garnish)
Instructions
Step 1: Cook the Orzo
1. Bring a pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and set aside.
Step 2: Prepare the Vodka Sauce
1. In a large skillet, heat the olive oil over medium heat.
2. Add the chopped onion and sauté until translucent, about 5 minutes.
3. Stir in the minced garlic and cook for another minute until fragrant.
4. Pour in the crushed tomatoes, vodka, and red pepper flakes. Simmer for about 5-7 minutes.
5. Reduce heat and stir in the heavy cream. Cook for another 2-3 minutes until the sauce thickens. Season with salt and pepper to taste.
Step 3: Combine Orzo and Sauce
1. Add the cooked orzo to the skillet with the vodka sauce. Stir well to combine, allowing the orzo to soak up the sauce.
Step 4: Serve
1. Plate the orzo pasta and place a Burrata cheese ball on top.
2. Garnish with micro basil greens and additional fresh basil if desired. You can also sprinkle some grated Parmesan cheese for extra flavor.
This dish combines the rich flavors of the vodka sauce with the creamy texture of the Burrata cheese, all enhanced by the freshness of micro basil.
