Ag News: Fennel demand on rise

What it fennel? What ever it is, people want it and Yuma County has it.

YUMA, Ariz. (KYMA, KSWT). As the winter harvest kicks off in the Desert Southwest we all know the oldies, but goodies. So many varieties of veggies are grown throughout our region. Somethings we're known around the globe for, and yet it doesn't cease to surprise us when a new addition comes along.

Meet the Fennel; it's a cousin of the carrot; culinary expert describe the taste much like black licorice, making it a distant cousin. Agriculture experts have seen a growing demand for the vegetable, especially during the holidays. Up until now, demand for it has come from our neighbors to the north and the east coast. But, it's popularity is growing among those on the west coast. As plant-based groups like the Vegan community vegetables like the fennel are used in a variety of recipes such as salads and pasta dishes.
